Strawberry puffs

December seems to be a time when the pace of life speeds up. At times like this it is good to have some favourite recipes that are quick to prepare and can be reheated to serve those who get home later. It's not all about main meals either - a couple of standby desserts may be just what everyone needs!
Ingredients
1½ sheets | Puff pastry |
1 Tbsp | Icing sugar |
1 | Egg |
1 cup | Cream |
½ cup | Natural yoghurt |
1 punnet | Strawberries |
½ cup | Lemon curd |
3 Tbsp | Icing sugar |
Directions
- Preheat oven to 200 degC. Cut eight evenly sized rectangles from the pastry sheets. Place on a cold baking tray, brush with egg and sprinkle with white sugar.
- Bake for 15 to 20 minutes until lightly puffed and golden. Remove from the oven and allow to cool.
- Beat the icing sugar and cream until thick, then fold in the yoghurt.
- Spread half of the pastry pieces with a thick layer of cream. Arrange strawberries on the cream. Spread the underside of the top pieces with lemon curd and carefully place over the strawberries. Serve at once, sprinkled with icing sugar.
Tip: The pastry can be cooked ahead of time, then you simply assemble these desserts immediately prior to serving.
