This tart is ideal for a picnic. It is easy to eat and tastes lovely at room temperature.
- Preheat oven to 180C. Heat oil in a pan and gently cook the chopped onion and garlic until just tender. Add finely sliced courgettes and oregano and cook for a further minute.
- Whisk eggs and milk together and season with salt and pepper. Mix together the courgettes, flour, egg mixture and cheese.
- Pour mixture into a greased 22cm round pie dish and bake in oven for 25 to 30 minutes. Stand for 10 minutes before serving.
