Vegetable chow mein
- Cook the noodles in boiling, salted water for two minutes or according to the packet instructions. Drain cooked noodles well and set aside.
- Heat oil in a wok or large frying pan. Add crushed garlic, sliced spring onions, beans, celery and carrots. Toss and stir-fry over a high heat for 5 minutes.
- Add hoisin sauce and soy sauce to taste. Add cornflour mixed with water, toss and stir-fry for 3 to 5 minutes to thicken, adding a little more water if mixture becomes too dry.
- Add noodles and toss to combine. Lastly, scatter with toasted cashew nuts and serve immediately.
