Lamb steaks with green herb sauce
( SERVES 4 )
An easy, affordable and delicious mid-week meal.
- Rub lamb with oil and sprinkle with salt and pepper.
- Place a frying pan over a high heat and cook steaks for 3 to 4 minutes on each side, depending on personal preference. Remove meat from the heat and rest for 5 minutes.
- Meanwhile, finely chop herbs - this can be done in a food processor if preferred. nCut chilli in half lengthways, remove seeds and finely chop. Mix herbs with chilli, sugar, vinegar, oil, salt and pepper.
- Serve lamb with green herb dressing and vegetables or salad.
