Brown Rice Salad
Rice is an inexpensive staple food and there is such a wide variety to choose from.
- Cook rice according to packet instructions, then allow to cool.
- Combine rice, grated carrot, sprouts, peanuts, celery, spring onion and parsley in bowl and mix well.
- Whisk together soy sauce, ginger, oil and brown sugar in another bowl. Season to taste with salt and pepper.
- Drizzle dressing over salad. Toss and serve.
