A delicious variation on traditional corn fritters, these are suitable for freezing so you can make a large batch.
1. Mix carrot, cumin, coriander, eggs, garlic, spring onions and breadcrumbs together in a bowl. Season with salt and pepper.
2. Heat a little oil in a large frying pan and cook 1/4 cup of mixture until golden on both sides.
3. Mix garlic with sea salt and yoghurt in a small bowl.
4. Serve carrot fritters drizzled with a little yoghurt dressing.
