Homemade baked beans
You can, of course, make these beans completely from scratch using dried beans and fresh tomatoes. As dried beans can be difficult to find and tomatoes are currently not in season, we are instead using quality canned ingredients, but the result is still tasty and hearty. Serves 4, ready in 1 hour
- Heat the oil in a large deep frying pan and cook the bacon bits, finely chopped onion and garlic until onion is tender.
- Add the bay leaf, tomatoes, brown sugar, mustard powder, cayenne pepper (optional), molasses and worcestershire sauce. Bring to the boil and then simmer for 20 minutes.
- Add the drained beans and cook a further 15 to 20 minutes until it's thick and saucy. Taste and season accordingly.
