Quick, easy and tasty, this apricot meringue is easily made with ingredients on hand. Try it with other preserved fruit such as peaches and pears.
- Preheat oven to 150 degC. Drain canned apricots in syrup and reserve ½ cup of the syrup. Place apricots in an ovenproof dish and cover with crumbs and ground almonds. Pour over sweet wine and apricot syrup.
- Beat egg (whites) until stiff and then gradually pour in the sugar while continuing to beat until the mixture is glossy.
- Pile meringue on top of the fruit and bake for 20 minutes until meringue is golden and firm.
