Feijoa and lime frozen yoghurt
( SERVES 4 )
- Put the feijoas, lime zest and juice in a food processor or blender and puree until smooth. Add the icing sugar and yoghurt and pulse until combined. If you have an ice cream machine, you can now churn the yoghurt mixture until frozen, then freeze or serve.
- Alternatively, pour the yoghurt mixture into a plastic container with a lid and freeze for 3-4 hours (or longer) until firm. Remove from the freezer and cut into chunks, then whiz again in a food processor until deliciously scoopable and soft.
- Spoon into bowls and eat immediately, or freeze. It will need 10 minutes out of the freezer to soften before eating.
