Aunty Freda’s fruity chews
( MAKES 16-24 )
This is one from my mother’s old recipe file, and eating it always takes me back to my childhood. It’s so quick to make and a great lunchbox filler or morning tea snack.
- Preheat oven to 160°C fanbake. Line a 30cm x 20cm slice tin with baking paper.
- Melt butter, sugar and golden syrup in a large pot over a medium-low heat. Remove from heat and stir in egg, flour, sultanas, baking powder and baking soda.
- Spoon into the prepared tin and flatten with the back of a spoon. Bake until set, golden and lightly puffed (about 25 minutes). Allow to cool in the tin then cut into pieces. Stored in an airtight container the chews will keep fresh for up to 2 weeks.
