Served stand-alone, this makes a simple lunch, or you can bulk it up with noodles and cooked salmon or chicken for a one-dish dinner.
Garlicky honey dressing
- Boil edamame beans in salted water until tender (about 5 minutes for frozen and 8 minutes for fresh). Rinse under cold water, drain and cool. Place sliced root vegetables in a serving bowl with edamame, rocket or baby spinach, sliced radishes, roasted almonds and microgreens if using.
- To make Garlic Honey Dressing, combine all ingredients in a small jar and shake to combine. Toss dressing through salad just before serving.
