Green cauliflower with lemon and almonds
( SERVES 8 )
If you can’t find the pointy romanesco or green broccoflower you can use ordinary white cauliflower instead in this recipe. If using the green varieties, don’t add the dressing until just before serving or the acid in the lemon will bleach out the gorgeous green colour.
- Bring a large pot of well salted water to a boil.
- Cut cauliflower into 2-3cm florets, add to boiling water and boil for 3 minutes. Drain, rinse under cold water, then drain again and set aside.
- Whisk together oil, garlic, lemon juice and chilli flakes to make a dressing.
- Just before serving, toss the dressing, almonds and parsley through the cauliflower, season to taste, and serve.
