Teriyaki fish and mushroom bake
( SERVES 6 )
Dried mushrooms have so much more flavour than fresh ones. They make a fabulous addition to both European and Asian sauces.
- Crumble dried mushrooms into a medium bowl, add the boiling water and allow to soak for at least 15 minutes.
- Preheat oven to 200°C. Place fish fillets in a single layer in a shallow baking dish and sprinkle with the thinly sliced white parts of the spring onions and the chilli, if using.
- Add teriyaki sauce to the soaking mushrooms, then stir in the cornflour. Pour over fish, season with pepper and bake until cooked through (about 20 minutes depending on the size and thickness of the fish). To serve, sprinkle with black sesame seeds and finely shredded spring onion greens.
