Retro prawn cocktail

You’ll find this classic prawn cocktail on many a restaurant menu these days. Some people like to use softly whipped cream in place of the mayo but this makes it really rich. Have some paprika to garnish with.
- To make the Cocktail Sauce, whisk the mayonnaise with lemon juice, tomato sauce and chilli sauce. Taste and adjust seasoning with salt, pepper and lemon juice. The sauce can be made up to a week in advance and chilled until needed.
- To assemble, divide shredded lettuce among 6 large glasses, allowing about ¾ cup per serving. Top with the spring onion, avocado and cucumber. Mix prawns with lemon juice, salt and pepper to taste and divide between glasses. Top with the sauce, using about 3 tablespoons per serve. Sprinkle with a little paprika and serve.
