The perfect margarita
( SERVES 8 )
Annabel says: You can buy freshly squeezed lime juice in bottles at some supermarkets – or use half and half lime juice and lemon juice.
|3 cups||Fresh lime juice|
|1½ cups||Caster sugar|
|12 cups||Crushed ice, or small ice cubes|
- To prepare glasses in advance, rub a wedge of lime around the rims of 8 glasses then dip each glass into a plate of salt to lightly coat the rim. Chill until needed.
- Combine lime juice and sugar in a blender and whizz until sugar has dissolved. Transfer to a large jug. Whizz ice in batches until slushy.
- Add slushy ice to lime juice mixture in the jug with tequila and stir well. Serve margarita in prepared glasses with extra lime wedges and flaky salt.
