Directions

  1. Heat a little olive oil and a knob of butter in a non-stick frying pan. Add similar-sized chunks of cooked potatoes and black pudding, and fry to colour and heat through.
  2. Pile on to warm tortillas, add chunks of avocado or tomato, grated soft boiled egg, a little parsley and capers and dress with a drizzle of aioli or hot sauce.
