Beef Medallions with Rocket and Parmesan
Simple and fresh ingredients at their best. Use a high quality parmesan cheese and olive oil - you’ll feel like you’re enjoying a meal straight from the Mediterranean.
- Rub the beef medallions in oil and season to taste. Pan fry the meat for 2½-3 minutes each side (medium-rare). Transfer to a plate, cover, and rest for 5 minutes.
- Toss the rocket leaves in the remaining olive oil and the vinegar. Place on a long platter.
- Slice the medallions and sit on top of the rocket.
- Scatter the parmesan over and serve immediately.
