This recipe came about after watching the movie Chef, where a professional chef decides to leave his kitchen job and open a food truck. He started with the Cubano. Traditionally it is served with pork, ham, Swiss cheese and pickle. We decided to make our own version of the sandwich using leftover pork from our mum’s Sunday roast but we added some spicy chorizo to give it a kick. With three different types of meat, cheese and pickles, this sandwich is not for the faint-hearted.
- Take the pieces of bread and spread the under side with the melted butter.
- Flip the pieces of bread over and spread four pieces with mayonnaise and the other four pieces with mustard.
- Place the ham, roasted pork and chorizo on top of the mustard. Arrange the cheese and pickles on the meat.
- Using the bread with the mayonnaise, press the sandwich together and heat a frypan to hot. Place the sandwiches in the pan and fry on both sides until golden and the cheese has started to melt.
