Microwave chilli nuts

Microwave chilli nuts

Many of my friends bring little gifts when they come for a meal such as a posy of flowers from their garden or a little jar of pickles. So for me there’s a hint of the spirit of Christmas year round. Of course at Christmas giving is more of an occasion.

Ingredients

1 cup Cashew nuts
1 cup Blanched almonds
1 cup Brazil nuts
2 tsp Chilli powder
½ tsp Ground coriander
½ tsp Cumin
¼ tsp Salt
1 pinch Cayenne pepper

Directions

  1. Place the nuts in a large microwave-proof dish. Toss with the oil. Microwave for 5-6 minutes, stirring once during cooking.
  2. Combine the spices and stir into the nuts. Cook for another 1-2 minutes. Cool completely before storing in airtight containers.
