Warren Elwin has taken liberties, twisting the gremolata idea to create toppings to add a healthy zing and maybe a bit of crunch to almost anything.

Ingredients

½ cup Walnuts, or pecans or hazelnuts
1 Orange, freshly zested, or use a grapefruit
1 handful Chervil, chopped
1 Tbsp Fresh ginger, finely chopped

Directions

  1. Blitz walnuts (or pecans or hazelnuts) to a crumb and mix with the orange or grapefruit zest, chervil and ginger.
  2. Serve sprinkled on salads (shaved fennel or jerusalem artichoke), with roast chicken and pork chops.
