4 Ta'ahine carrot cake

I love the way my Niu ( Tongan coconut ) came out After roasted in the Microwave - Nothing added to it Just put in a microwave dish, roast for 2-3 minutes or unti is nice and brown. Drizzle a bit of lime over it. Use it for the topping of 4 Ta'ahine Carrot cake. Feel very special to use Tongan Niu ( coconut ) I Layed out the roast coconut on the top of the cake like Kahoa ( Lei ) which what my name is. Kahoa is the Tongan translation for Lei or necklace.

Ingredients

4 cups Carrots
2¼ cups Brown sugar
1½ cups Olive oil
3 Eggs
2 tsp Vanilla essence/extract, use Heilala vanilla
2¼ cups Wholemeal flour
3 tsp Cinnamon
2 tsp Baking powder
1 tsp Nutmeg
1 tsp Allspice
1 tsp Salt
¼ tsp Ground cloves
1 cup Walnuts
1 cup Canned crushed pineapple
1 Banana
½ tsp Almond essence
½ cup Coconut, roasted
½ tsp Sesame seeds

Directions

  1. Preheat oven to 350deg. F. Lightly grease a rectangular pan. Pour batter into pan. Bake at 350d . for 45 minutes. Cool cake completely
  2. Use cream icing. 250 g cream cheese. 1 1/2 cup of icing sugar 1 lime 1/2 tsp heilala vanilla extract white sesame & black sesame seeds Chopped almonds Dry mango, lesi ( papaya ) Lastly spread the roast coconut like a Kahoa ( lei ) on the top of the cake. The best carrot cake ever that you could taste . Ifo 'aupito ( very tasty ) Enjoy
