Chicken satay curry

No ratings yet

I created my own satay curry sauce which turned out to be fabulous! It uses random ingredients in your cupboard but totally comes together perfectly!

Ingredients

¼ cup Tomato sauce
2 Tbsp Peanut butter
1 tsp Curry powder
½ tsp Chilli powder
0 pinch Chilli flakes
0 dash Fish sauce
1 Lemon
½ can Coconut milk
½ cup Water
0 Salt & freshly ground pepper
1 large Chicken breast
1 cup Green beans

Directions

  1. Squeeze juice from lemon and mix with all the sauce ingredients in a pot and bring to a gentle boil.
  2. Meanwhile cut the chicken breast into bite sized pieces and measure out the green beans. (I used frozen sliced green beans).
  3. Add the chicken pieces to the sauce and cook until the chicken is tender.
  4. Add in the green beans and cook until heated through but still firm and bright green. Taste and season accordingly. Serve immediately.
